brocolli soup help please!??

Is it as easy as brocolli, stock, salt, pepper, cream? Any one gopt a good recipe, I have lots of broc to use up!

made this the other day and liked it...

Broccoli and Potato Soup

serves 4

Ingredients:
2 heads broccoli
1 medium onion
2 cloves garlic, minced
2 medium potatoes – peeled and chopped
1 litre chicken stock
50g unsalted butter
200ml cream
chopped parsley
olive oil
salt and pepper

Method:
In a heavy based pot, sweat the onion and garlic with the butter. Then add the broccoli and potatoes. Turn the heat to low and place a lid on the pot. Cook for a further 5 minutes. Add the stock and cook until the potatoes and broccoli are soft. Blend with a stick blender. Add the cream and season to taste. Garnish with the chopped parsley and a drizzle of olive oil.

Excellent! I'll whiz that one up tomorrow. I'm the world's worst soup cook, so I need to follow a recipe. If I just chuck stuff in a pot, even the chooks won't eat it...

And a tip: make sure there aren't any green grubs in it. They're so embarrassing as a garnish when you serve it up... :oops: :oops: (I still like broccoli soup, though :roll: )
