main meal vegetable recipes please

My 16 year old has decided to go vegetarian. Fortunately she'll eat pretty much every vegie but I'm looking for some new and interesting substantial meals to serve her. Any suggestions appreciated, dairy and eggs ok, but nothing with a face!

Ricotta and Spinach lasagne is nice, Spag bol with lentiles replacing the mince, Quiche.

I made this a while back and everyone liked them.
Zucchini and Haloumi Fritters.
300g zucchini
1 onion grated
250g haloumi grated
1/2 cup plain flour
2 teasp grated lemon rind... See more
2 eggs
1 tablesp chopped fresh dill
light olive oil to fry

1) Grate zucchini then squeeze out as much liquid as possible.

2)Place in a bowl and add onion, haloumi, flour, lemon rind, eggs and dill. season with S&P (personally i think the haloumi will be enough salt) and stir to combine.

3) Form the zucchini mixture into about 25 bite size patties. Refrigerate for 30 min to firm.

4)Heat the oil over medium heat and fry in batches for 1–2 min each side till golden. Drain on kitchen paper.

Indian recipes have lots of vego options as well. Veg soups and stews with pulses. Tofu stir fries.

This is my all time favourite vegetarian recipe - my husband won't eat anything that didn't have parents :roll: so I make this when ever he goes away and whenever I have vegetarian friends around. It always gets rave reveiws and it's very easy.

Pumpkin & Chickpea curry

Heat 1 tbsn olive oil in a pot, add one chopped onion sprinkle with salt to stop browning and cook over medium heat, stirring occassionally until soft - about 5 mins. Add 1 teaspoon red curry paste (I use Asia at home curry paste), 1/2 tspn ground cumin & 1/4 tspn ground corriander and stir for for 1 minute. Add 1kg cubed pumpkin and stir until coated. Add 1 litre veggie stock (I use a Campbells tetra pack) increase heat to bring to boil. Reduce heat, cover loosely and cook until pumpkin is soft - about 30 mins. Add 2 x 400 gram tins chickpeas and 1/2 bunch chopped corriander. Serve with rice.

It's delicious and makes the whole house smell amazing.

Eggplant parmigiana....zucchini and basil frittata....spinach pie...you can buy vegetarian ravioli at the supermarket and serve with a simple tomato sauce...lentil curry with rice...let me know if you want any of those recipes and then I'll type it out. :)

I have a flat bread recipe that I have used for many years.
Very easy
1 cup of sharps flour (which is made from chickpea)
Large bowl
boiling water
rolling pin
and a flat skillit or heavy frying pan

Place the flour in a bowl and make a dough using boiling water (very important )
you may have to use a spoon to mix as it will be to hot.
Have the dough not to sticky.
Place some flour on a flat surface and pinch off about 1/4 cup of dough
Roll the dough as thin as you can get it. (very thin)
Heat up the skillit add a small amount of butter make sure the skillit is well oiled
Place the rolled dough on the skillit and cook one side
turn the bread over and cook you will notice that air bubbles will form between the cooked sides
Repeat the process with the rest of the dough.
This a traditional bread used for eating curries.

sorry sharps is hard wheat flour.
I have used besan not as good as sharps.

Pumpkin and Sweet Potato Oven Baked Risotto

1 cup diced pumpkin
1 cup diced sweet potato
garlic clove/s crushed
1 onion, chopped
1 cup arborio rice
2.5 cups good quality stock
30 gms butter
2 or 3 tblspns parmesan cheese (good quality fresh stuff is best)
fresh parsley, chopped.
Put everything except parsley and parmesan cheese in an oven proof dish, cover with a tight fitting lid and bung into the oven @180 ish for 30 to 40 mins. I stir it once during this time. Take out, add parmesan and add parsley just before serving. This is so quick and easy, and you can add other stuff like pine nuts, spinach, mushrooms etc.

Just a note, if your daughter wants to avoid things with faces, you might need to be careful what cheeses you use as most still use animal rennet. You can get non animal rennet cheeses at good organic stores and some of the bigger supermarkets now.

Don't know if you'll be able to get them but here in SA in the supermarkets trhere's ready made vego meals under the brand "Tasty Bites" which are little foil pouches that only need microwaving, and add them to rice. They're pretty cheap, I buy them on special between $3 and $4. I love the Kashmir spinach, and the agra peas and greens is damn good too. They're indian based, so a couple are nice and spicy. They're great for emergency times when you can't be bothered making something from scratch. I have a couple in the cupboard at work for when I haven't got anything else. They're quite low in kilojoules as well. Altho the package is 2 servings, I tend to treat it as one serving and use less rice.
