Broccoli, spinach and basil soup.

This one's straight off the internet, but I have a glut of broccoli and plenty of basil. I thought it'd be an intersting combination but it's really nice.

1 brown onion, roughly chopped
2 cloves garlic, crushed
1 litre stock (I used massel low salt chicken ultracube)
400gm potato, peeled and chopped
450 gm broccoli including stems.
75 gms spinach (recipe said baby spinach leaves but I used about 100 gms of large leaves and stems)
1/2 cup fresh basil leaves
1 heaped tablespoon ready made pesto
sour cream (optional)

Cook onion in a little butter, add garlic, add potatoes and then stock. Bring to boil, cover and reduce to a simmer for about 5 mins. Add broccoli stems. Simmer til nearly cooked, add florets. When just tender, remove from heat and add spinach. Let cool slightly, add basil leaves, blend or puree and put back into pan. Add tablespoon of pesto and serve. Sour cream can be added to the bowl just before serving.

Thanks Karyn, Yummy! Used massell vegetable stock cubes, homemade pesto and tofutti mock sour cream (vegan) very tasty.
