Zucchini and Feta Fritters

Zucchini Fritters

about 700 gms coarsely grated green zucchini,
2 tsp salt,
3 spring onions, finely chopped,
1 cup continental parsley, finely chopped,
200 gms feta, coarsely crumbled,
1/2 cup plain flour,
3 eggs, lightly whisked,
black pepper to taste,
olive oil for frying.

Put zucchini and salt in a bowl, mix well, cover and set aside for about 10 minutes. Squeeze out the excess moisture, combine with onion, parsley, feta, egg, flour and pepper. Heat oil in frying pan, drop tablespoons of mix in and flatten. Cook for about 2 minutes each side. Fry in batches, drain on paper towel. Serve straight away.

I made it exactly to the recipe, but mine were a bit moist - I think I'll press more water out of the zucchini with paper towel or a tea towel next time, and only use 2 eggs.
They were really yummy, the feta and egg go all melty and gooey in the middle. Really nice, and great for that excess zucchini!

I've got a similar recipe somewhere that uses haloumi instead of feta.

Served with tatziki and lemon wedges.
