Raw beans safe to eat?

Postby Bill O » Wed Feb 08, 2012 8:53 pm

I know that scarlet runners and kidney beans are toxic to eat when raw, but I was a bit taken aback to realise that lots of people consider even the ordinary green bean varieties toxic as well (although less so).

Since I've eaten them many times without ill effect, and the oracle of the internet (which is always right  ) itself seems unclear on it, I was wondering what everyone here thought?

I can grows green beans like you wouldnt believe, but I like to eat them raw. It would be a shame to have to cook them... I'd need to find something else as my staple crop.

I'd be devastated if I came accross a definitive source that said you couldn't, Bill, as it's the best way to eat them. I can't see why tender young beans would be any different to peas, and they're both very yummy straight from the garden.

I've never heard that they're bad and I often graze the vegie garden for a meal instead of cooking it! I also love raw corn straight from the stalk and eaten standing in the corn patch...

When my kids were small carrots, peas & corn never made it to the cooking pot.

You mean you can cook peas and beans?

cinnamon make it Greek, soya sauce makes it Chinese, Garlic
makes it good.” Alice May Brock, Alice’s Restaurant Cookbook.
