Lemon trees

Just curious about this - we have a Meyer lemon variety called 'lots of lemons' which has been growing lots and lots for a few years. I often see lemon trees which look like actual trees - with a central trunk and branches coming off it above a certain height. Ours is much better described as a bush - lots of trunks growing from close to ground level and extending outwards. I've only pruned it to shape it and shorten some long branches, thin it out a bit, especially in the middle, and cut off some very low-hanging growth. Is it all right or are you supposed to train them to grow with a central trunk?
