Frozen Fruit Treats.

1.5 cups sugar
1.5cups water
1kg fruit
300ml cream or vanilla yoghurt

Sugar syrup: Place sugar and water in saucepan and bring to boil. Simmer 5 minutes. Allow to cool completely.
Chop fruit very finely or use a processor. Add one cup of sugar syrup.
Mix remaining sugar syrup with the cream or yoghurt.
Pour cream or yoghurt mix into a bar tin or other container. (The cream or yoghurt should be 5-6cm deep.) Freeze.
Pour fruit mix on top of the frozen cream or yoghurt. Freeze.
When completely frozen, turn out and cut into bars.
Wrap the individual bars with plastic film and place in freezer.

Tips: Can be used for most fruits and berries.
If using fruit that discolours, adding one tablespoon of lemon juice to the fruit will improve the colour.
A mixture of processed fruits can be added in individual layers to make 'rainbow' bars.
Mix fruits for fruit salad and cream (or yoghurt) bars.
Canned fruits (peaches,pears,etc.) and the syrup in which they are packed can be used.
