Does anyone know of good eating late plum varieties for West Sydney? We have 500-1000 chilling hours. The later the better.

Green Gage is the only late plum variety I am aware of in nurseries. It's a European plum so you may not have the chill requirements. I think late plums are harder to grow, the fruit is at much higher risk from pests due to the time on the tree.
